It’s Sunday once again, but today is not like any other Sunday.
This Sunday, I present to you… the best damn grilled cheese sandwich you will ever eat in your life. Probably.
Today just felt like a cheese toastie kinda day, and I’m a sucker for anything with onion, especially when it’s caramelised, so this sandwich combo was basically a win-win situation. It’s super easy (though it requires a teeny bit of prep… nothing strenuous, promise!) and would also work really well for large groups, if you had a few sandwiches toasting at once.
Without further ado, I present to you… my caramelised onion grilled cheese sandwich.
– 4 pieces of nice crusty bread (I used a light rye)
– 1 large or 2 small red onions, sliced
– 4 generous slices of sharp cheddar
– 1 tbsp-ish of your favourite BBQ-style sauce
– Pepper, to taste
Heat a good dollop of butter up in a large saucepan over medium heat. (Notice I didn’t use a specific measurement for the butter… use as much as you think is reasonable. Which is generally more than necessary. You do you.)
Fry the onion, stirring occasionally, until they soften and turn sweet-tasting (this is generally about 15 or so minutes. I didn’t fry mine for quite as long as I like them to still be slightly crisp).
Put the BBQ sauce on two pieces of the bread, followed by the cheese, then top with the caramelised onions. Finish them off with a decent amount of pepper, add the lids and place in a sandwich press or under the grill in your oven.
Cook until the cheese melts and the bread is golden brown. Cut, serve and enjoy!
