Happy Sunday, everyone!
To get you prepared for the week, today’s Sunday Cook-Up is a supercharged, bulk-size brown rice salad. In my family we all work during the week, so we make up a big batch of this salad on Sundays, which we’ll take portions of each day for our lunches, getting rid of the last-minute rush for food before we head out.
I love this meal because it’s chock-a-block full of veggies, which helps to bulk out the rice and does a great job at filling you up. Plus it’s SO GOOD.
